Summer Bounty Meal Plan for the Last Full Week of July!

This Week’s Basket from Milk and Honey Organics Included Bio-Way Farms’ Cherry Tomatoes, Bio-Way Farms’ Zucchini, Hurricane Creek Bok Choy, Local Blueberries, Local Bi-Color Corn, Bananas, Local Peaches, Red Leaf Lettuce, Red Potatoes, Local Celery, Lemons, and Jumbo Red Onions.

We were out of town last weekend for my husband’s grandmother’s funeral, so my sister graciously created last week’s meal plan. If you missed it, check it out here.

Summer Basket and Weekly Meal Plan

This Week’s Basket from Milk and Honey Organics Included Celery, Kiwi, Valencia Oranges, South Carolina Peaches, Local Green Bell Peppers, Flavorosa Pluots, Spinach, White Corn, Hurricane Creek Red Oak Lettuce, Parisi Farms Tomatoes, Parisi Farms Potato Medley and Parisi Farms Marketmore Cucumbers. What a beautiful summer basket!!

Weekly Menu Plan:

New Recipes: (others can be found on M&H’s Recipes Archive Page)

  • Fruit, Cheese and Herb Skewers (instead of skewers, I layer them in a large mouth mason jar and drizzle with a mixture of 1 Tbsp. balsamic vinegar + 2 Tbsp. granulated sugar – it’s faster and has a fun tangy sweetness!)
  • Green Pepper Egg Rings with Tomatoes
  • Giada’s Spinach Lasagna Rolls
  • Cream Cheese Dill Spread (for Cucumber Sandwiches and/or Veggie Dip): combine 2 blocks of cream cheese with 1/2 c. mayonnaise and 1/2 c. sour cream; add 1 Tbsp. dried dill (or 2 Tbsp. fresh), 1 tsp. garlic powder, 1 tsp. onion powder, 1/4 tsp. salt and 1/8 tsp. pepper. Peel cucumbers and slice thin for sandwiches.
  • Chicken Satay
  • Thai Cucumber Salad (add cooked and chilled rice noodles to salad, if desired, or serve rice noodles hot on the side)
  • “Compost Pizza”

Ploughman’s Lunch Recipe by Ina Garten

I love Ina Garten! And if you don’t already, you will after this lunch spread! It reminds me of our Irish Pub Party, in a way. And it’s the perfect lunch for a Saturday picnic…or anytime, for that matter.

Here’s the ingredients from Ina’s “Recipe” from the Food Network:

  • Fig or lemon leaves, for decoration
  • Chunk of good English Cheddar
  • Jar of Chutney
  • Baked Virginia Ham, thickly sliced
  • Crisp apples, cut up
  • Celery stalks with leaves, cut in half lengthwise
  • Bunch radish, sliced in half
  • Soft Hard-Boiled Eggs (see Recipe here)
  • Baby carrots
  • Loaf of crusty bread, thickly sliced
  • Unsalted butter, softened

This Week’s Basket from Milk and Honey Organics included Granny Smith Apples, Satsuma Mandarins, Jumbo Sweet Yellow Onions, Pomegranates, Celery, Bananas, Carrots, Ataulfo Mangos, Silver Dollar Mushrooms, Hurricane Creek Lettuce, Kem Radish Microgreens, Parisi Farms’ Beets and White Sweet Potatoes.

I am so excited to try the Satsumas! They’re a type of mandarin or orange, and a variety I have never had the privilege of tasting prior to this. And, of course, I love beets and sweet potatoes!

Here’s the meal plan I created using PepperPlate.com. I have to say, the more recipes you add, the easier it is to meal plan. You simply go to the planner tab and type a word (like “beets”) and every recipe that has that word in the title pops up for you to select the recipe you want.
