Wednesday’s Meal Plan: Brain Food!

I have a big lab test in Anatomy tonight: Bones & Muscles! So, I want to make sure I’m thinking clearly. I’m working till 2, then taking the afternoon off to finish studying.

Breakfast: 1/2 c. fresh blueberries, 1 c. Strawberry Soup, 1 red pepper and 1/3 cup homemade hummus, 1 c. coffee with 1 tsp. each of raw sugar and non-dairy creamer.

Lunch: Homemade Chicken Pot Pie (can’t wait for this: I used my great-grandmother’s pie shell recipe, chicken breast, cream of mushroom soup, mixed vegetables and mixed mushrooms), and a plum.

Preparing the Pot Pie

Pre-cooked Chicken in olive oil and garlic, 1 can cream of mushroom soup, 3 cups of mixed vegetables, and 1 cup frozen mixed mushrooms

Brush with egg white before baking (375F for 45 minutes). Yum!

Dinner: 1 cup white rice and 1/2 c. field peas, 1 tsp. butter.

After School Snack (aka, So glad THAT test is over!): 1/2 c. vanilla ice cream.

Totals (Yeah! I’m within all ranges today!):

  • Calories: 1357 (goal 1260-1516)
  • Carbs: 202 (goal 173-209)
  • Fat: 44 (goal 42-51)

  1. The chicken pot pie looks great. I think I will try this. Do you have a simple recipe for cream of mushroom soup or did you use organic?
