Monday Meal Plan

I started this morning with 10 oz. of organic vanilla yogurt drink. I ate 2 c. of watermelon throughout the morning. I love this for a snack! And I had my 1 cup of coffee and 2 cups of hot green tea this a.m. as well.

Lunch was 1 c. real mashed potatoes with 1 Tbsp. sour cream, 1 Tbsp. shredded cheddar, and 1 Tbsp. black olives with 1 fried green tomato and 1/2 c. of fried eggplant (leftovers from Sunday lunch).

Dinner will be a garlic pesto wrap with 1 oz. muenster cheese, 1/4 c. alfalfa sprouts, 3 oz. chicken breast, spicy brown mustard, and banana peppers.

The only range I’m a little over in is protein, but I’m okay with that. And my totals for today are:

  • Calories: 1344 (goal: 1260-1516)
  • Carbs: 174 (goal: 173-209)
  • Fat: 47 (goal 42-51)
  • Protein: 64 (goal: 47-57)
