Breakfast was a granola bar and blueberry Greek yogurt with a cup of green tea.
Then came the fun stuff! We had a Cinco De Mayo Potluck at work today! Everyone signed up to bring something and it was a huge success! (My boss’s boss even complimented me on organizing it, which is always nice.) It was actually kind of hard to say no to the pollo fundido, but I did. I also said no to the Mexican rice because the lady who brought it said she used chicken bouillon cubes in it. So, to be stay with my Meatless May theme, I went without.
I started with a non-alcoholic Pina Colada (yes, one of the guys literally brought in his blender and stuff to make Pina Coladas, Strawberry Daquiris and Mango Pineapple Smoothies). It was great! He used fresh coconut in it too! Of course, everything was non-alcoholic: we are at work afterall. 🙂
I had one flour tortilla topped with lettuce, tomatoes, corn, black beans, onions, guac, salsa, and reduced fat sour cream. Dessert was this Mexican Coffee I make (I’ll try to post the recipe later, but it’s basically coffee, milk, chocolate syrup, cinnamon, brown sugar, and vanilla). Mmmm!
Tonight is our last Shepherding Group with the whole gang! It’s kind of sad really, but it’s happy at the same time because our leaders are moving to Colorado to help Redeemer Bible Church (the church plant from Heritage Bible Church, where we attend here). So, we’re doing a cookout. Everyone’s bringing their own meat and a side dish. I bought a zuchinni and baby summer squash for me. I’m going to slice it longways and drizzle it with olive oil and salt and pepper and throw it on the grill.
