Day 3 of Meatless May. Going well so far! Remember, I am allowing dairy products, eggs, and seafood. It was a busy day and I didn’t have much time to pack breakfast, so I had a glass of Organic Grape Juice and a slice of Veggie Pizza.
Morning Break was a nice cup of coffee. Lunch was another slice of pizza, and I had half of a bag of popcorn for a snack.
Dinner was great! Tuna salad sandwich (10 oz. can, 2 Tbsp. mayo, 2 Tbsp. pickle relish, salt and pepper: shared between me and Bryan). We each got two slices of homemade sourdough wheat bread. I put some sprouts on top of my sandwich. We each had 2 1/2 carrots, and 1 oz. of cheese: I had Dill Havarti and Bryan had Swiss. Delicious! The sprouts were a nice, crisp touch!
