Today, I slept in late, got up, made a smoothie, watered the garden and the flower beds, and took a walk. I came back and mixed up two batches of bread dough, and set them aside to rise. (I’ll try to post pictures of varieties made in later posts.) Once again, the windows are open wide. I’m trying to see how long I can hold out before turning on the A/C for the year. So far, so good.
After a short nap (I obviously stayed up too late the last two nights), I made some Kashi and cod for lunch, while I sliced an apple, a pear, a banana, and a grapefruit to dehydrate. I also had a loaf and a half of sourdough bread that was no longer good for sandwiches, but it wasn’t moldy. So I cut into small squares, drizzled it with olive oil, and sprinkled it with garlic salt, parsley, and basil. I lined two trays of the food dehydrator with parchment paper and placed the bread cubes on them to make homemade croutons. Can’t wait for those! There was a small handful of bread cubes left, so I made a mini-egg casserole for breakfast tomorrow. (See the recipe category for my mom’s sausage-egg-and-cheese casserole.)
Then I started on my book reviews, while watching The Gospel of John on DVD. Now I’m off to workout. I think I’ll try a P90X video with my friends Rick and Jan.
Happy Easter! ~Melissa
