Summer Basket and Weekly Meal Plan

This Week’s Basket from Milk and Honey Organics Included Celery, Kiwi, Valencia Oranges, South Carolina Peaches, Local Green Bell Peppers, Flavorosa Pluots, Spinach, White Corn, Hurricane Creek Red Oak Lettuce, Parisi Farms Tomatoes, Parisi Farms Potato Medley and Parisi Farms Marketmore Cucumbers. What a beautiful summer basket!!

Weekly Menu Plan:

New Recipes: (others can be found on M&H’s Recipes Archive Page)

  • Fruit, Cheese and Herb Skewers (instead of skewers, I layer them in a large mouth mason jar and drizzle with a mixture of 1 Tbsp. balsamic vinegar + 2 Tbsp. granulated sugar – it’s faster and has a fun tangy sweetness!)
  • Green Pepper Egg Rings with Tomatoes
  • Giada’s Spinach Lasagna Rolls
  • Cream Cheese Dill Spread (for Cucumber Sandwiches and/or Veggie Dip): combine 2 blocks of cream cheese with 1/2 c. mayonnaise and 1/2 c. sour cream; add 1 Tbsp. dried dill (or 2 Tbsp. fresh), 1 tsp. garlic powder, 1 tsp. onion powder, 1/4 tsp. salt and 1/8 tsp. pepper. Peel cucumbers and slice thin for sandwiches.
  • Chicken Satay
  • Thai Cucumber Salad (add cooked and chilled rice noodles to salad, if desired, or serve rice noodles hot on the side)
  • “Compost Pizza”

This Week’s Basket (from Milk and Honey Organics) Included Hurricane Creek’s Lettuce, Parisi Farms’ Cherokee Purple Tomatoes, Parisi Farms’ White Sweet Potatoes, Bioway Farms’ Garlic, Bananas, South Carolina Peaches, Red Delicious Apples, White Mushrooms, Beets with Beet Greens, Local Collards, Apricots, and Jumbo Red Onions.

This Week’s Meal Plan (using PepperPlate.com):

Recipes for this Week’s Meal Plan:

  • Carnitas with Black Beans and Cilantro Lime Rice (“Carnitas” not included in this week’s plan, but feel free to add it as a delicious accompaniment to your beans and rice!)
  • Tomato Egg Cups
  • For Cheesy Grits, follow package instructions and add 1/2 c. of shredded cheddar (or your favorite cheese) during the last 2 minutes of cooking; a few cloves of minced garlic is also a nice addition.
  • For the Garlic Toast, I highly recommend mincing fresh garlic and spreading it on your toast with butter before broiling. Yum!
  • Fettucine Alfredo (homemade Alfredo Sauce)
  • Brown Rice Bar (aka “Unfried Rice”) – a great way to use up leftovers!

  • Bananas make a great snack, or peel them and freeze them to add to a quick breakfast smoothie!

Another Fun Double Date Night In

Tonight was another random, last minute, double date night in. Our friends Leigh and Nate’s anniversary was yesterday, so I sent them an email and told them we should get together again soon. They suggested tonight, so we said sure! They came over for a healthful Lasagna (we use the recipe on the back of the Barilla No Bake Lasagna noodles box and substitute ground turkey for the beef/sausage; plus, every time it says to add meat, add meat AND veggies–we used 1 c. frozen spinach, 1 small zucchini, 1 small yellow squash and about 8 chopped baby carrots). Plus they brought garlic bread and we made a salad (see below).

Green Salad with Carrots in the center, surrounded by a Caprese Salad of roma tomatoes, mozzarella, capers and chopped fresh basil. Drizzle with olive oil and your favorite vinegar and sprinkle with salt & pepper or your favorite seasoning grinder. Yum!

For dessert, we had a rich cup of French Roast coffee and Double Chocolate Torte (gluten-free vegan recipe from Oh She Glows). Even the dessert is full of good-for-you stuff, don’t knock it before you’ve tried it. Seconds will be had…guilt-free! Delicious chilled, at room temperature, or my favorite way–frozen!

After dessert, they ended up teaching us two new games. If you hadn’t noticed, games are one of our favorite things to do. We played a lot of games during our dating years, especially Settles of Catan, Ticket to Ride, Scrabble and Dutch Blitz. We even had game nights that we co-hosted weekly during our first couple of years of marriage. Six years later, the frequency of games has decreased, but we still enjoy board and card games quite a bit.

Last time Nate and Leigh were here, they taught us Dominion, and it became a fast favorite, to the point we “had” to buy it and have played it for date nights multiple times since then (good for 2 players). Tonight, they taught us Small World and 7 Wonders–both are very good games!

“Risk”-esque game of conquering territories. Only 9 turns per player, but has a bit more of a learning curve than 7 Wonders and takes a bit more time with strategizing.

A fast-paced, easy to learn game for 3+ players, with multiple strategies and outcomes.

Thank God for like-minded friends and lasting memories of fun nights together! And Happy Anniversary, Nate and Leigh!

What to Do When Your Friends Go “Gluten Free”

I’ve had several friends recently find out they are either sensitive or allergic to glutens. Some just get worse headaches when they eat glutens and others found out they have a severe case of Celiac’s disease. There’s Gluten in SO many things now! But it can be done! It helps to remember that potatoes and rice are still okay. Most all-natural meats are GF (beware processed meats in general anyway, but especially when your Dairy Free or Gluten Free – they can be filled with additives). And, of course, fruits and veggies are always a win! Below are some resources I’ve gathered to use when I take treats to their house or have them over for dinner.

Some GF-Friendly Sites I Like:

 Most grocery stores have their own Gluten Free section now. If you haven’t tried Quinoa (pronounced KEEN-wah), it’s great! It’s a whole grain that’s gluten free and contains protein as well as Omega 3’s. And it can be served savory or sweet, hot or cold. It cooks kind of like rice, in about 15 minutes. You might also look into “Paleo Diet” or “Primal Blueprint” (aka Cave Man Diet) – they are heavy on meat and veggies and almost eliminate grains, so you could find some options using those too. I have a couple friends on Primal, and they have a really good grain free pizza crust that uses almond meal, egg, and parmesan cheese.

And, yes, they can still eat dessert! A couple of my favorite GF-Friendly desserts are the Flourless Brownies from Whole Foods Recipes and a No Bake Chilled Double Chocolate Torte recipe from Oh She Glows.

One thing I try to remind my newly-“GF” friends is to look at all the rich things God has given them to enjoy instead of focusing on what they can’t have. After all, they’re not the first people to have been given a food restriction (remember  Adam and Eve in the Garden – they were given a whole garden and told to avoid ONE tree). So, enjoy the “garden” and praise God for all His rich blessings!
